Healthy, Budget Friendly, Meal Tip#1:
Buy a large piece of meat and challenge yourself to turn it into four meals, using your freezer to help you streth it out. Example: I am going to purchase a large, inexpensive pork shoulder roast (5-7lbs depending on what will fit in my crock-pot), season it well and simply, and cook it all day in the crock-pot. For dinner that night, I will get all the pork pulled ap…art and split the entire amount in half. One half will be mixed with our favorite BBQ sauce, the other half will be left as is. The BBQ sauce half will get split in two, one half for BBQ pulled pork sandwiches with cole slaw and baked beans, the other half will get put in the freezer for the same meal a second time later in the month. The 2nd half of the pulled pork that was left plain, will get divided in half then frozen in Qt. freezer bags for 2 meals of Carnita pork tacos with simmple trimmings of veggies and cilantro and a side of rice later this month. That’s the plan. 🙂 Thinking of doing this with some inexpensive chicken quarters as well. You can make burritoes from the meat if you like, just make some brown rice, some beans slightly mashed, corn, diced green peppers, onions, tomatoes, salsa, cheese ect and wrap ’em up!
